Too Hot To Turn on the Oven???

If it's too hot to turn on the oven, but you don't want to spend the money ordering out, here's a recipe to try.

I adapted this recipe from one provided to the Seay Mansion Society cookbook (recipe by Sharon K. O'Hern. pg. 44).

Chicken Tetrazzini (Slow Cooker)

Ingredients:
2-3 Boneless Skinless Chicken Breasts
1 Cup Water
1 Medium Bell Pepper chopped fine
1/2 Medium Onion chopped fine (optional)
2 tbsp. Olive Oil
1 Can Cream of Mushroom Soup
1/2 lb Velveeta cut into small cubes
1/2 Spaghetti Noodles

Add Chicken Breasts and Water to slow cooker and cook on high for 4 hours.

Remove Chicken from slow cooker, leaving water. Add Velveeta and Cream of Mushroom Soup to slow cooker. Meanwhile, begin heating water for Spaghetti Noodles and heat Olive Oil over medium heat.

Add Spaghetti Noodles to boiling water and saute Bell Pepper and Onion (optional) in Olive Oil until tender.

Add Bell Pepper and Onion to slow cooker and stir.  Shred Chicken. Add to slow cooker and stir.  Stir occasionally until Velveeta is completely melted. Add cooked Spaghetti Noodles, covering well with mixture in slow cooker.
